Its origins date back to 653 BCE, when it was a favorite of Sassanids who ruled the Ottoman palace. At that time, it was called "rahat-ül hulküm".

In the centuries since, bakers and confectioners around the world have continued to advance and complicate the Turkish Delight. After years of being a hidden treasure in Turkey, the dessert was finally introduced to the world in the 19th Century by unknown British traveller. The traveller brought it back to Britain but he failed to remember the original name of the dish — renaming it "Turkish Delight".

In many ways, it's best in its most simple form. Made with the sugar, water, flavors, and passion of Istanbul.

It's late evening in Istanbul. Our Turkish baker, Emre, is measuring ingredients and managing inventory. He'll wake up early to bake his favorite local dessert: Turkish Delights. It's a ritual he knows well. His family has been hand making them for generations; his community, for centuries.

He begins by combining select local ingredients — sugar, water, cornstarch, and natural flavoring. He combines, heats, shapes, and packages each delight. Then, he loads them in his car and rides through the bustling bazaar streets of Istanbul. Soon, they'll be on a plane to San Francisco.
