End Grain
End-grain construction is the gold standard of professional chefs for a reason. It gently absorbs the impact of knives and doesn’t dull them. When cutting on an edge-grain, the knife is effectively trying to saw the fibers in half, which will dull the knife. Because the wood fibers stand upright on an end-grain board, the blade is able to slip in between the vertical wood fibers, protecting the blade and not cutting the wood fibers. The wood fibers will naturally return to their starting position, effectively “self-healing” the cutting surface.
