Safer, Easier and Faster

If you're going to own one kitchen knife, make it this one.

The Essential Japanese Damascus Steel Kiritsuke Knife does it all — from slicing through meat and cabbage to deftly chopping vegetables for fine knife work. Made with versatility in mind, it's favored by experienced Japanese chefs for a reason.

But unlike other high-quality knives, this kiritsuke hits The Essential trifecta.

Craftsmanship at its finest
Made through over 40 meticulous steps with upgraded AUS-10V steel from Tokai, Japan. Incredibly hard, it stays sharper longer, meaning less sharpening and more precision.

Balanced for every task
The full tang design offers perfect balance and weight, making it light enough for detailed work, yet powerful enough to handle large cuts like watermelon and cabbage.

Unmatched value
At a fraction of the price of similar knives, it brings premium quality, edge retention, and ergonomic comfort to your kitchen without breaking the bank.

Materials

Italian Olive Wood
Italian Olive Wood is an ideal choice for knife handles, providing exceptional durability and moisture resistance due to its dense structure and natural oils. The intricate grain and rich golden hues give each handle a unique look, and its solid feel ensures a well-balanced grip. Over time, the wood develops even more character, making it both a practical and luxurious addition.

AUS-10V Steel
Crafted from AUS-10V steel by Aichi Steel in Tokai, Japan, this blade features 1.05% carbon content for exceptional strength and durability. Its superior edge retention ensures a razor-sharp blade that lasts, making it ideal for precision work.

Design

Damascus Steel
Each blade is crafted by repeatedly heating, hammering, and folding steel layers by hand. This traditional process creates distinctive striations that naturally reduce drag while slicing.

Kiritsuke Blade
The pronounced angled tip makes quick work of both fine slicing and a tidy dice. The wide blade can smash garlic and ginger and easily scoop up chopped food to transfer.

15° Dual Bevel
Hand sharpened to a precise 15° on each side, resulting in a razor-sharp edge that offers versatility for both right- and left-handed users.

Full Tang
A full tang runs the entire length of the knife, providing intentional weight and balance. This design allows the knife to tackle large tasks like cutting watermelon and meat while retaining the agility needed for fine dicing and precise knife work.

Ergonomic Hexagonal Handle
Our modern take on the traditional octagonal handle, ours is hexagonal to be more ergonomic with edges for slip free handling.
